Edinson Argote – Chiroso Advanced Natural
Raspberry • Kumquat • Caramel
PRODUCER | FARM
Produced by Edinson Argote at Finca Quebraditas in Huila, Colombia, this Chiroso is grown at 1,850 metres above sea level. Edinson takes a meticulous approach to post-harvest processing, combining extended fermentation, selected yeasts and precise temperature control to explore the full potential of this distinctive variety.
His focus on controlled fermentation and careful drying allows him to develop complexity, sweetness and structure while maintaining consistency throughout the process. The result is an innovative approach to coffee production, rooted in precision, experimentation and a commitment to quality.
COFFEE | PROCESSING
Following selective harvesting, with a minimum of 90% ripe cherries, the coffee undergoes flotation before an initial 60-hour whole-cherry fermentation in food-grade drums. The cherries are then dried for approximately 12 days until reaching 20% moisture, before being rehydrated with hot water and undergoing a second fermentation lasting 96 hours, using mosto and selected yeasts at temperatures below 25°C.
The coffee is subsequently dried for 76 hours under carefully controlled temperatures, beginning at 40°C for 12 hours before decreasing to 35°C for the remaining 64 hours. Finally, the coffee is stabilised in GrainPro-style bags. This multi-stage Advanced Natural process is designed to enhance complexity, sweetness and depth, while preserving the distinctive character of the Chiroso variety.
Brewing Advice
Brewing Advice
WATER
Because brewed coffee is mostly water, its mineral balance has a major impact on flavour. We recommend filtered or soft mineral water below 150 ppm TDS to support sweetness, clarity and acidity without muting the coffee’s character.
RESTING
We roast on a Loring for clarity, sweetness and structure. For the most expressive flavour notes, we recommend resting our coffees for three to four weeks, allowing excess gas to release and the cup to become more balanced and defined.
OUR BREWING APPROACH
We recommend brewing with a V60 or similar drip brewer. Start with 18g of coffee to 300g of water at 92–96°C. Use a medium-fine grind and aim for a total brew time of approximately 2:45–3:15.
Recipes are starting points rather than fixed rules, as water, grinder, brewer and personal taste will all affect extraction. Adjust the grind first: go finer for greater sweetness and body, or coarser for more clarity and a faster drawdown.
