COOPERATIVE | PRODUCER
Edison Argote is the producer behind Finca Quebraditas, a progressive coffee farm in Huila focused on quality, experimentation and carefully controlled post-harvest processing. His work explores how fermentation can enhance sweetness, aromatic complexity and fruit expression while maintaining balance and transparency in the final cup.
Through close attention to cherry selection, fermentation and drying, Edison produces distinctive coffees that reflect both the potential of the varieties he grows and the character of the farm. This Geisha is a clear example of that approach, combining modern processing with elegance, structure and a strong sense of place.
COFFEE | PROCESSING
Edison Argote Geisha Advanced Natural is a vibrant expression of modern Colombian coffee production from Finca Quebraditas in Huila. Carefully processed through an extended natural fermentation, this lot develops remarkable aromatic intensity, sweetness and structure while preserving the refined character of the Geisha variety.
The cup opens with delicate cherry blossom florals and rose-like aromatics, layered with vibrant pink guava sweetness and refined tropical acidity. Its texture is silky and elegant, carrying expressive fruit character with precision and balance. As the coffee cools, deeper sweetness emerges alongside a clean, lingering floral finish. Contemporary in style yet grounded in terroir, this is a coffee defined by clarity, complexity and graceful expression.
Brewing Advice
Brewing Advice
WATER
Because brewed coffee is mostly water, its mineral balance has a major impact on flavour. We recommend filtered or soft mineral water below 150 ppm TDS to support sweetness, clarity and acidity without muting the coffee’s character.
RESTING
We roast on a Loring for clarity, sweetness and structure. For the most expressive flavour notes, we recommend resting our coffees for three to four weeks, allowing excess gas to release and the cup to become more balanced and defined.
OUR BREWING APPROACH
We recommend brewing with a V60 or similar drip brewer. Start with 18g of coffee to 300g of water at 92–96°C. Use a medium-fine grind and aim for a total brew time of approximately 2:45–3:15.
Recipes are starting points rather than fixed rules, as water, grinder, brewer and personal taste will all affect extraction. Adjust the grind first: go finer for greater sweetness and body, or coarser for more clarity and a faster drawdown.
